# How To Make:
01 - In a mixing bowl, combine olive oil, lemon juice, minced garlic, oregano, cumin, paprika, salt, and pepper. Add chicken cubes and toss thoroughly to coat. Cover and refrigerate for at least 20 minutes, up to 2 hours for enhanced flavor.
02 - In a small bowl, whisk together Greek yogurt, grated cucumber, minced garlic, fresh dill, lemon juice, olive oil, salt, and black pepper until smooth and creamy. Transfer to refrigerator to chill until assembly.
03 - Remove marinated chicken from refrigerator. If using skewers, thread chicken cubes evenly onto skewers. If using stovetop, leave cubes separate for individual cooking.
04 - Preheat grill or grill pan to medium-high heat. Place chicken on grill and cook for 3 to 4 minutes per side, turning once, until golden brown and internal temperature reaches 165°F (74°C). Transfer to resting plate.
05 - Divide cooked rice evenly among 4 serving bowls. Top each bowl with grilled chicken, diced cucumber, diced tomato, sliced red onion, diced bell pepper, and halved Kalamata olives. Add crumbled feta cheese if desired.
