I love how quick and easy this salad is to prepare, yet it always impresses guests with its fresh flavors and wholesome ingredients.

Ingredients

  • Beans: 2 cans (400 g each) white beans, drained and rinsed
  • Vegetables: 1 medium cucumber, diced, 1 red bell pepper, diced, 200 g cherry tomatoes, halved, 1 small red onion, finely chopped
  • Cheese: 120 g feta cheese, crumbled
  • Fresh Herbs: 2 tbsp fresh parsley, chopped, 1 tbsp fresh mint, chopped (optional)
  • Dressing: 3 tbsp extra virgin olive oil, 2 tbsp freshly squeezed lemon juice, 1 clove garlic, minced, 1 tsp dried oregano, Salt and freshly ground black pepper, to taste

Instructions

Step 1:
In a large bowl, combine the drained white beans, cucumber, red bell pepper, cherry tomatoes, and red onion.
Step 2:
In a small bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
Step 3:
Pour the dressing over the bean and vegetable mixture. Toss gently to coat.
Step 4:
Add the crumbled feta and chopped herbs. Gently fold to combine, being careful not to break up the feta too much.
Step 5:
Taste and adjust seasoning if needed. Serve chilled or at room temperature.
