→ Fondant Fish Toppers

14 - 8 ounces white fondant
15 - Gel food coloring in blue, green, orange, and yellow
16 - Edible black marker or black food coloring
17 - Cornstarch for dusting

# How To Make:

01 - Preheat oven to 350°F. Line a 12-cup muffin tin with cupcake liners.
02 - In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
03 - In a large bowl, beat softened butter and sugar together until light and fluffy, approximately 2 to 3 minutes.
04 - Add eggs one at a time to the butter mixture, mixing well after each addition. Stir in vanilla extract until combined.
05 - Gradually add the dry ingredients to the wet mixture, alternating with milk in three additions. Mix just until combined, being careful not to overmix.
06 - Divide batter evenly among cupcake liners, filling each about two-thirds full. Bake for 18 to 20 minutes until a toothpick inserted in the center comes out clean. Cool cupcakes completely in the tin before frosting.
07 - Beat softened butter until creamy. Gradually add sifted powdered sugar, then vanilla extract. Add milk one tablespoon at a time as needed to achieve a fluffy, spreadable consistency. Tint with blue gel food coloring to desired shade.
08 - Divide white fondant into portions and tint each with desired gel food coloring using blue, green, orange, and yellow. Knead each portion until color is evenly distributed.
09 - Shape small ovals from colored fondant for fish bodies, flattening slightly. Create tiny triangles for tails and fins, attaching them with a small dab of water. Use an edible black marker or a tiny brush with black food coloring to draw eyes on each fish.
10 - Place finished fondant fish on parchment paper and allow to air-dry for several hours until firm.
11 - Frost each cooled cupcake with blue buttercream, creating swirled patterns to resemble water. Top each cupcake with one fondant fish topper.

# Cooking Tips:

01 -
  • The fondant fish are way easier to sculpt than you'd think, even if you've never worked with fondant before.
  • Vanilla is the perfect blank canvas for the blue buttercream and colorful toppers to really shine.
  • Kids go absolutely wild for these, and they're impressive enough to feel special without requiring professional baking skills.
02 -
  • Fondant dries out quickly if you leave it exposed, so work with one color at a time and keep the rest wrapped tightly in plastic wrap.
  • If your fondant cracks when you're shaping it, it means it's too dry; knead in a tiny drop of water and try again.
03 -
  • If your fondant toppers start to soften on the frosting, it just means your kitchen is warm, but they still taste delicious even if they get a little slouchy.
  • Keep your hands slightly damp when sculpting fondant because the moisture helps pieces fuse together without looking clumpy.
